I have been a cereal lover for many years. And along the way I have discovered that I can incorporate many of my favorite cereals in some of my dessert dishes.
About a week ago I created a recipe that consisted of a bundt cake, butter cream icing and Captain Crunch cereal. This is one of my favorite cereals so I was excited to use it in a dessert.
I made my yellow bundt cake batter and mixed in crushed pieces of Captain Crunch cereal. I mixed the cereal in real well because I wanted it to be all through the cake. I let the cake bake for thirty minutes and then I let it cool a few minutes on the counter.
While the cake was cooling I started working on my frosting. I added some Captain Crunch cereal to the frosting along with some toffee chips. Next I frosted all sides of the bundt cake and I sprinkled a few cereal pieces on the top. This might sound like a really weird cake, but you would be amazed how good it looks and taste. Also, the toffee and cereal flavor really go well together. I served this cake at a birthday lunch and everyone enjoyed it. I served it with some vanilla ice cream and ginger ale fruit punch. This cake will last for up to two weeks if you seal it up good and keep it in the refrigerator.
I have also used Raisin Bran cereal in many of my dessert recipes. One recipe that I use it in most often is in my carrot, zucchini and raisin muffins. I use a box of muffin mix, and then I add in two handfuls of crushed raisin bran flakes. I want the flakes to be really small, so I put the cereal in a food processor. The bran in the flakes adds a lot of texture and flavor to the muffins. The cereal also gives the muffins a really rich looking color. If I am making the muffins for breakfast I usually won’t create a topping. However, if I am making the muffins for dessert, than I will create a raisin bran frosting. To make it all I need is some chocolate frosting and a handful of raisin bran. Again, I know that this recipe might sound strange, but trust me you will like it. I actually made a platter of these muffins for work, and they were gone before 10:00am. Where I work you can tell if something taste good or not, by how fast it gets eaten up. These muffins only lasted one hour.
Other cereals that work well in dessert recipes are Apple Jacks and any type of granola based cereal.
