We all have comfort foods we like to eat when we are feeling stressed or having a really bad day. This might be rich chocolate brownies, decadent ice cream, and rich creamy macaroni and cheese.
I have been able to find a lot of easy to make comfort food recipes on the internet, but most of them were very unhealthy and full of calories. Fortunately I have been able to come up with a way to make these recipes healthier.
One of my favorite comfort foods is chocolate brownies. To make them less fattening I changed some of the key ingredients. Instead of using whole milk and whole eggs, I use egg whites and Greek yogurt to bind everything together. In addition, instead of adding chocolate pudding mix to the brownie batter to make the brownies richer, I add coca powder and water. Although cocoa powder is not as rich as chocolate pudding, it still gives the brownies a nice rich chocolate flavor. I even save a few calories by adding almonds instead of walnuts. This may not be your traditional comfort food brownie, but trust me it still taste good.
Macaroni and cheese has ranked as the number one comfort food of all time. That’s because who doesn’t like baked pasta noodles blended with rich milk, butter, and melted cheese? For years I would make a large pan of macaroni and cheese whenever I needed comfort or had a bad week. I used to make it the traditional way with lots of milk, butter and cheese. But in recent years I began tweaking the recipe to make it a little healthier.
The macaroni and cheese I make today consist of penne pasta noodles, almond milk, egg whites, white beans hummus, and cottage cheese. After I cook the noodles, I pour them in a large bowl and add in a half container of cottage cheese and four tablespoons of hummus. I add in these two ingredients first while the pasta is still hot, so they can melt and blend into the pasta noodles. Next I add in a half cup of almond milk and three egg whites. You have probably noticed that there is no butter in this recipe, but you can add it if you want to. I prefer to use white beans hummus because it gives the macaroni and cheese a rich taste (just like butter), and it contains much less fat and calories. It might be hard to imagine making macaroni and cheese without traditional cheddar cheese, but you will see that cottage cheese works just fine.
French fries are another popular comfort food. Instead of using traditional white potatoes and frying them in grease, try using sliced sweet potatoes and baking them in the oven.
