I have seen many beautifully decorated cakes in my time, and many of them were decorated with jams and fresh fruit.
When comes time to decorating a cake, most of us reach for a can of frosting. I mean what else can you decorate a cake with? How about some pureed blueberries or strawberry jam?
Two weeks ago I made a three layer cake chocolate cake. Instead of decorating it with chocolate frosting like I usually do, I decorated it with strawberry jam and fresh strawberries. After I took the cake layers out of the oven, I coated the tops of the layers with the jam. I like to coat the layers while they are still hot so the jam can seep into the cake. After coating the top of the layers with the jam I put on some fresh chopped strawberries. On the very top layer I put some whip cream and tiny spoonfuls of jam. The color contrast of the red and chocolate looked amazing. The inspiration for this cake was chocolate covered strawberries.
Another fruit that can be used to decorate a cake is blueberries. You can either use whole blueberries or blueberries that have been pureed in a blender. I like to put the blueberries in a blender because they are easier to use. You can use any type of cake flavor, but I like to use yellow or lemon cake. I really like the color and flavor contrast of lemon and blueberry. I start this recipe with a two layer lemon cake. Next I coat the top layers with the pureed blueberries and then I sprinkle on some lemon zest. I stack the two layers together and then drizzle on the leftover blueberry puree over the whole cake. In addition to tasting good, this cake is also much lighter on calories than most traditional frosted cakes. I got the idea for this cake after eating a lemon cupcake topped with blueberry frosting from a local bakery.
Pineapple and coconut are also good alternatives to cake frosting. Whenever I use coconut and pineapple as my cake decoration, I like to use spice or carrot cake. I make a sheet cake and then cover the top with chunks of pineapple and coconut. To make the cake moist, I use a toothpick to prick holes in the cake, and then drizzle on pineapple juice. The holes allow the juice to penetrate into the cake. You can either serve this as a whole sheet cake, or you can cut the cake into small individual circles or squares. This cake not only taste good, but it also doesn’t take a lot of time to make.
As you can see you can decorate a cake without using heavy icing or frosting.
