Getting together with your girlfriends is a great way to have fun and relax. It’s also a great time to try out some new fun recipes.
Many of my friends have asked for recipe ideas when they are planning girlfriends get together. I usually try to give them recipes that are easy to make with lots of flavor, and can also be served in small portions.
If the people you are inviting to your get together are not lactose intolerant, than I recommend making a large pan of vegetable lasagna. I think this is the perfect recipe for any type of get together because it is easy to make and you can really stretch it to feed a crowd. For my vegetable lasagna recipe I like to use vegetables that are firm enough to withstand sauces and baking. There are some vegetables that start out firm, but after baking and being soaked in sauce, they became limp or droopy. This in turn causes the lasagna to become soggy and fall apart.
The vegetables I recommend using are eggplant and green and red peppers. I cut up the eggplant longwise, and I chop the peppers up into small pieces. Before I add the vegetables to the lasagna I heat them up in a pan for few minutes. I don’t want them to fully cook; I just want them to soften a bit. After I put on the first layer of lasagna noodles, I add on the vegetables. Next I spoon on several tablespoons of tomato sauce and then some sour cream and shredded pieces of medium sharp cheese. I repeat this step three times, or until I fill up the lasagna pan. On the very top layer I put on a layer of thin almond slices, chopped walnuts and some paprika for a little added crunch and flavor. The time it takes to bake the lasagna will vary based on the size of the lasagna and your oven. In most instances however it usually takes 30 to 40 minutes for the lasagna to fully bake.
After the lasagna has finished baking, let it cool for 20 minutes. Cooling helps all the ingredients meld together and make it easier to slice individual pieces. To go along with the lasagna, I suggest serving a smoothie made with Greek yogurt, honey, cucumbers and strawberries. You and your friends will have a good time eating the lasagna, sipping your smoothies and telling funny stories.
For dessert, I recommend making a large pan of homemade peanut butter cookies or a batch of homemade cinnamon raisin granola. Both are easy to make and also make great take-home gifts.
Getting together with your girlfriends can be a lot of fun, especially if there is good food to eat.
