I really like eating a hot bowl of rice or grits early in the morning, especially when it‘s cold outside. When I was younger all I wanted in my grits and rice was a chunk of butter, but as I got older I started wanting something a little spicier.
I think one of the reasons I got bored with just putting plain butter in my rice and grits was due to all the breakfast recipes I began collecting from cookbooks and food magazines. I started collecting these recipes two years ago while researching for new ways to add more flavorful to French toast and pancakes. Through this research I found some cool spicy recipes for rice and grits.
One recipe I came across was a red bean and green pepper rice dish. This recipe starts with a bowl of cooked brown rice, a cup of cooked red beans, and grilled green peppers. To make the light gravy just add two teaspoons of water to the red beans. Red beans come packed in a thick sauce, and when you add a little water it turns into light gravy. You can make the grilled peppers by chopping up a green pepper into small pieces and placing them in a hot pan with a little olive oil or butter. Adding this recipe to rice and grits make them taste so much better. You can eat this dish by itself for breakfast or you can serve it as a dinner side dish with baked fish or turkey.
I also found a recipe that combines rice, salmon, and dried cranberries together. I was a little unsure about this recipe at first because of the dried cranberries. I thought that the cranberry flavor would taste weird in rice. But after making this dish I discovered that the rice tasted more flavorful with tartness of the cranberries. This recipe is really easy to make. Take a cup of canned salmon and blended it with cooked brown rice. Once everything has been blended together, start adding in the dried cranberries. What I like about this dish (besides the taste) is that you can eat it for breakfast or lunch.
During my research I also found a few spicy grits recipes. One of my favorites is spicy chocolate grits. When I first saw chocolate in the recipe I thought it was a mistake, but it wasn’t. For this recipe you will need a pot of cooked yellow grits, a teaspoon of red chili powder, a teaspoon of butter, and a handful of chocolate chips. Turn the heat on low and let all the ingredients melt and blend together. Afterward the grits will turn a ruddy reddish brown color. This makes the grits looks weird, but they still taste great.
