There was a time when all I wanted for dessert was traditional apple pie. I would sometimes eat it by itself, and other times I would eat it with a big scoop of whip cream. However, as time went on I started craving something more a little than just plain crust and apple pie filing. So I did what I was always do when I get bored with my recipes, I started experimenting in the kitchen.
I didn’t want to get rid of my traditional apple pie recipe altogether, so I updated it by adding some new toppings and ingredients. Instead of making a traditional crust out of regular dough, I now make my crust with crushed pretzels, cinnamon, and melted butter. The first step is to put some pretzels into a large plastic food bag and crush them with a rolling pin (you will need 2 bags of crushed pretzels to make this crust). I then pour the crushed pretzels into a large bowl. Next I melt two tablespoons of butter in a small pan. I slowly drizzle in the melted butter over the crushed pretzels and then sprinkle on a teaspoon of cinnamon. I take a spoon and gently blend the ingredients together and let it sit for a few minutes. Next I spoon the pretzel mixture into a pie pan and gently spread it around the edges. I let the pretzels bake for 7 minutes in a 350 oven. After baking I let the crust cool for 5 minutes.
I start my apple pie filling with 4 green peeled apples. I cut the apples up in large chunks and put them in a bowl. I add a half cup of water, a few drops of almond extract, a tablespoon of brown sugar, and two tablespoons of organic honey. I toss the apples gently and then pour them into a pan. I cook the apples on top of the stove on medium heat for fifteen minutes. After that the apples have finished cooking I cover them and let them simmer until the apples have fully softened. I then pour the apple mixture into the pretzel crust and top it with some crushed pretzels and caramel drizzle.
The pretzel crust gives the pie a whole new flavor, and the caramel drizzle adds more sweetness.
Now doesn’t this sound better than a traditional apple pie?
The next recipe I updated was my lemon meringue pie. I did this by adding some pieces of chocolate mint candy to the lemon pie filling and the crust. I also updated the meringue by adding tiny bits of chocolate mint candy to the egg whites. These might sound like odd ingredients to add to a lemon meringue pie, but I assure you they make lemon meringue pie taste so much better.
