On cold dreary afternoons I like to eat food that will make me feel soothing and warm inside. Some of my favorite’s foods are homemade kale tomato soup, stuffed chicken breast, homemade veggie chili, and my special homemade veggie muffins.
About two weeks ago it was really dreary and cold outside where I live. When the weather is like this all I feel like doing is snuggling up on the sofa and eating something warm. For this particular cold dreary day I made a big pot of homemade kale tomato soup. I started by rinsing a bowl of kale greens under cold water, patting them dry and drizzling olive oil over the kale green leaves. Next I put the kale greens into a heated pan. While the greens were sautéing I sprinkled in a little salt and pepper. After the greens had been in the heated pan for three minutes I transferred them into a large soup pot. Next I diced two large tomatoes and a green pepper, and then I chopped up two stalks of celery. I put all these vegetables into the same pan I used to sauté the kale greens. I drizzle in a teaspoon of olive oil and I season the vegetables with two teaspoons of cumin and black pepper. I let them sauté for five minutes and then put them in the soup pot with the kale greens. Next I poured in a cup of chicken broth and a half cup of water into the soup pot and let the kale greens and vegetables boil for an hour. If I am in the mood for a zestier soup, I add in some nutmeg, cinnamon or curry powder. To go with my soup I crumble in chunks of gluten free bread or gluten free crackers.
Another food I like to eat on a cold and dreary afternoon is stuffed chicken breast. Honestly I like chicken any day of the week, but I especially like when it is cold outside. I start this recipe with two pieces of organic chicken breast. (I like to use organic meats because they are not contaminated with harmful pesticides or chemicals). Next I use a sharp knife to cut an opening in each chicken breast. I fill each one with diced red peppers, bean sprouts, and black olives. Next I drizzle on olive oil and sprinkle on salt and red chili flakes. I put the chicken breasts in the oven and let them bake for 45 minutes. I like to cover the chicken with foil or a lid so they don’t dry out. The black olives and red peppers make this a very colorful and rich recipe.
